Thai Papaya Coconut Lime Leaf Smoothie

Kaffir lime leaves are used extensively in Thai cooking, such as curry and tom yum goong. The stiff, waxy green leaves have an intense floral and citrus aroma that gives these dishes its distinctive flavour.

But they are not limited to savoury dishes.

One of my favourite drinks in Phuket was a mind-blowing lime leaf-infused coconut margarita with fresh ginger. All day. Everyday.

So, here I bring you my favourite Thai drink-inspired fruit smoothie. I chose to use an elephant papaya I had on hand, but also try it with mangoes, pineapple and bananas for variety!

Detox Green Smoothie with Lemon Ginger and Pear

Fresh lemon juice,  ginger and sea salt are three ingredients that help break down toxins and flush your gut. Naturally sweetened with pear and coconut water, plus a hint of mint, this is a very refreshing pick-me-up for Sunday morning!

Detox Green Smoothie with Lemon Ginger and Pear

Ingredients

  • 1 cup coconut waterIMG_0320
  • 1 pear
  • 1 cup spinach
  • ½ lemon, squeezed
  • 1 tsp ginger
  • 2 mint leaves
  • pinch of sea salt

Let’s go

  1. Blend all ingredients together until smooth
  2. Feel fresh!

Sneak some greens in the morning!

Ingredients:

  • 2 heads of Kale, ripped into smaller pieces 
  • 1 ripe banana
  • 1/2 ripe avocado
  • 1/2 cup soy or almond milk
  • 1 heaping spoonful of natural nut butter
  • 3 ice cubes
  • Optional toppings: hemp hearts, coconut flakes, chia seeds, cacao nibs, buckwheat granola

Let’s go:

  1. Blend everything together until smooth
  2. Sprinkle with your choice of toppings
  3. Don’t chug it too fast!
