Medjool Date Rolls

IMG_3030Naturally sweet and packed with nutrients, dates are one of my favourite whole foods to substitute sugar in treats. The combination of dates with nuts is pervasive in traditional Middle Eastern desserts, but also hitting the shelves at health stores because it is raw, delicious and nutritious. But before you reach for your wallet, let me tell you these are incredibly simple to make with only 3 base ingredients mashed together, rolled around and refrigerated. So let’s get going and you’ll have a massive tray of date rolls in front of you in 5 minutes from….. now!

Medjool Date Rolls

  • Servings: ~20 rolls

  • 1 cup soft, pitted medjool dates (~12)
  • 1/2 cup nuts (pistachios, cashews or almonds)
  • 1/2 cup coconut (or more nuts if not a coconut fan)
  • optional: 1 tsp vanilla, 1 tsp sea salt

Let’s roll:

  1. Line a large plate or tray with waxed paper. Evenly spread 3 tablespoons of your choice of coating (shredded coconut, nut pieces or nut flour) on the paper.
  2. Set aside a handful of nuts. Process the remaining ingredients in a food processor on high for 3-4 minutes until a batter forms, pausing to scrape down the sides as needed.
  3. Add the remaining handful of nuts and pulse a few times for some larger chunks.
  4. Scoop the batter out in large spoons and roll into balls or cigar rolls with your palms. Place on the lined baking sheet and roll around to coat.
  5. Refrigerate until solid before serving. Store refrigerated in an airtight container.
