Spicy Nori Popcorn

Weather is warming up and the transition from couch to patio is on its way!!! Over the course of this long Canadian winter, I’ve caved, more often than not, to cold weather-induced munchies: kimchi fries, duck poutine, blueberry balsamic donuts, you name it.  But big taste doesn’t always need to be big on calories. Popcorn is a perfect low calorie sponge for decadent sweet and savoury dressings. Gourmet flavours like truffle parmesan, garlic rosemary, and salted caramel add a kick and only a fraction of the calories compared to their more indulgent counterparts. The recipe below is adapted from Food & Wine and is both delicious and healthy in that 1 cup is only 60 calories and 3 grams of fat. So why not bring this addictive snack outdoors and keep on munching right into pool season, guilt-free ;).

Spicy Nori Popcorn

  • Servings: 15 cups

  • 1/2 cup popcorn kernels
  • 3 tbsp coconut oil
  • 1 sheet nori, crumbled
  • 1 1/2 tsp shichimi togarashi, or chili powder
  • 1 tbsp toasted sesame seeds
  • 1 tsp kosher salt, or to taste
  • Optional: melted butter to drizzle

Let’s pop:

  1. Heat oil in a large saucepan or dutch oven to medium high heat.IMG_1599
  2. Add 3 kernels and cover the lid until they pop.
  3. Add the rest of the kernels in an even layer (if base of pan is not large enough, separate into batches)
  4. Cover and move saucepan away from heat for 30 seconds. IMG_1603
  5. Return the saucepan back to heat and gently shake the pan partially covered while the kernels pop.
  6. When the kernels stop popping, remove from heat and pour into a large bowl.
  7. Add the butter and seasonings, mix mix mix, and serve popping hot 😀
  8. To store: let cool completely and place in a closed container in a cool and dry pantry. Will stay crisp for a day.
