Peanut Butter Chocolate Chip Protein Cookies

Looking for an excuse to have dessert for breakfast? Here’s a cookie recipe that will make a decadent indulgence guilt-free thanks to some protein powder and natural nut butter forming the bulk of the batter. I threw in some oats for healthy fibre and because I love the chewiness of them in my cookies. But, of course, you can easily reduce this or replace with coconut or almond flour if you want to go the extra low-carb mile. Did I mention it only takes 20 minutes to throw together from start to finish? Yep. These are ready in a snap when you are hungry and in a hurry!!!

Peanut Butter Chocolate Chip Protein Cookies

  • Servings: 8 -10 cookies

  • 1 cup old fashioned oats
  • 1 scoop protein powder (I used chocolate peanut butter)
  • 1/2 cup natural nut butter
  • 1/4 cup unsweetened apple sauce or water
  • 2 tbsp egg whites
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 cup mix of chocolate chips and cacao nibs, or more to taste

  1. Preheat (toaster) oven to 350F.
  2. In a large mixing bowl, combine the oats, protein powder, baking soda, cinnamon and chocolate chips.
  3. In a medium bowl, beat the eggs, then mix in the peanut butter and applesauce/water with a large spatula until combined.
  4. Pour the wet mixture into the dry and slowly fold until combined into a dough.
  5. IMG_1562Form the dough into balls and place onto a lined baking sheet. Flatten the balls a little with a fork and bake for 10-12 minutes until golden brown.
  6. Remove from the oven and let cool on a wire rack. Enjoy!
