All-in-One Breakfast Bake

Enjoy this hearty morning meal with family for holiday brunch, or solo as a morning-after cure following a big night out. This dish combines your egg, sausage, veg and bread all in one dish, and best of all, it can be prepped a day ahead to pop in the oven with your sleeping mask on in the AM. Make sure to set the timer!

All-in-One Breakfast Bake

  • Servings: 6

  • 6 eggs
  • 1 pound pork or turkey sausage, casing removed
  • 3 cups milk
  • 2 tbsp chives or green onions, chopped
  • 1 medium white onion, chopped
  • 1 red bell pepper, chopped
  • 1 pound loaf of day old sourdough bread, cubed
  • vegetable oil for greasing the dishIMG_1316
  • 1-2 cups of grated aged cheese (cheddar or gruyere)
  • S&P to taste

Let’s cook:

  1. Grease a 4-quart baking dish with oil
  2. In a large skillet over medium heat, add the sausage, onions and red pepper. Using the oil IMG_1323from the sausage, stir-fry for 5-7 minutes until the sausage is crumbly and vegetables are just cooked.
  3. Place the bread at the bottom of the dish. Pour the stir-fry on top and sprinkle with cheese.
  4. In another bowl, whisk the eggs, milk, chives and S&P. Pour this into the dish and cover with plastic wrap. Refrigerate for 30 minutes or overnight to let the bread soak. IMG_1327
  5. When ready to eat, take the dish out of the refrigerator while pre-heating oven to 350F. Bake for 1 hour or until the top is golden brown and a toothpick inserted in the middle comes out clean.
  6. Serve hot.
