Clean & Mean Reese’s Pieces

IMG_1254I recently tried Kewaza’s peanut butter cookie dough energy balls and was WOWWW’d! One look at the ingredients list: Dates, Peanut Butter. Chocolate chips, and I had to make them in bulk for myself. The first time around, I threw these ingredients into a food processor with spoon in hand to make the balls.  Well… after having used said spoon to eat the batter out of the jar with a tall glass of milk, I’ve decided that spoons are too dangerous for this recipe, and I bring you a modified bar version that requires refrigeration, slicing into formal rectangles, and individual wrapping in hopes to impart better self-control to you lot who give this a try 😀 .

Clean n' Mean Reese's Pieces

  • Servings: 12 bars

Ingredients:

  • 1 1/2 cup roasted peanuts, lightly salted
  • 1 1/2 cup dried pitted dates
  • 1 cup Organic bittersweet chocolate chips
  • Optional: cacao powder, shredded coconut for topping

Let’s go

  1. IMG_6039Line an 8 x 8- inch baking dish or pan with parchment paper
  2. Place the peanuts and dates in a food processor and pulse until a uniform crumble (I like things crunchy so I made sure to leave peanut chunks). Add the chocolate chips and pulse a few times to incorporate.
  3. Transfer this batter onto the baking dish and press down with your palms or a spatula.
  4. Sprinkle with your toppings and refrigerate 30 minutes until the bars firm up before slicing.
  5. Keep individually wrapped and refrigerated for longevity… 😉
