Slow Cooker Chicken Burrito Bowl

It’s that time of the year to clear the countertop for the slow cooker. My crock pot is my saviour on long chilly days, when coming home means finding that my crock pot has spent tireless hours working on a hot homemade meal, ready to be devoured.  No Judgey. 😉

The ingredients: pulled chicken, beans, corn and rice, are cooked all in one pot.  For toppings, I like sharp cheddar cheese, a few drops of hot sauce, and a dollop of sour cream. Find your biggest spoon, and dig in.

Slow Cooker Chicken Burrito Bowl

  • 1 1/2 lbs boneless skinless chicken breast and/or thighs
  • 14.5 oz can diced tomatoes
  • 15 oz can black beans
  • 1 1/2 cup frozen corn
  • 1 cup chicken stock, divided
  • 2 tsp chilli powder
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1 tsp cumin
  • 1 cup brown rice


  • sour cream/ greek yogourt
  • shredded cheese
  • chives
  • salsa
  • hot sauce

  1. Place the whole chicken breast or thighs in the crock pot, then add the diced tomatoes and 1/2 cup of chicken stock, chilli, salt and cumin. Make sure the chicken is immersed in liquid, cover with lid and cook on low for 3 to 4 hours.
  2. Add the rice, black beans and frozen corn and another 1/2 cup of chicken stock and continue cooking for another 3 to 4 hours.IMG_1033
  3. If you are not around for step 2, step 1 is the same, but cook the rice in a separate pot using the the remaining 1/2 cup chicken stock and 1 1/2 cups water.  Add the beans and frozen corn to the crock pot until warmed through before serving. 
  4. Remove lid, and cook on high if there is remaining liquid. Shred the chicken with a fork and mix it in evenly with the remaining ingredients.
  5. Add S&P to taste, then transfer into bowls. Top it off with your additional toppings.
  6. Dig in 😀
