Warm Spelt Salad with Roasted Butternut Squash, Almonds and Goji Berries

Warm food cravings on a rainy day doesn’t mean you have to ditch your salad.  Roasted butternut squash is tossed with chewy spelt grains, crunchy almonds, sweet goji berries and a light dressing to blend it all together. Satisfying and delicious every bite! 

Warm Spelt Salad with Roasted Butternut Squash, Almonds and Goji Berries

  • Servings: 6

Ingredients:

  • 1 butternut squash, peeled and cubed IMG_0298
  • 1 tbsp olive oil
  • 1/2 tsp nutmeg
  • 1/4 tsp cinnamon
  • 2 cups cooked spelt
  • 1/2 cup almonds
  • 1/4 cup goji berries
  • Salt and freshly ground black pepper

Dressing

  • 1/8 cup olive oil IMG_0417
  • 1 lemon, juiced
  • Salt and freshly ground black pepper
  • Handful of basil
  • Option: goat cheese or feta, crumbled

Let’s cook

  1. Pre-heat oven to 375F. Toast the almonds for 5-10 minutes on a lined baking sheet until fragrant. Remove from heat.
  2. Toss the squash with 1 tbsp olive oil, spices and salt and pepper and roast on the lined baking sheet 15-20 minutes until fork tender.
  3. Toss the squash with the rest of the salad ingredients and drizzle with dressing to taste. Mix in cheese if using and garnish with basil.
  4. Serve immediately warm, or cool if storing.
