Chocolate Chip Coconut Pecan Squares

Calling all coconut lovers!!! These decadent bars, inspired by the southern favourite, Hello Dollies, are made clean and oh so simple by yours truly :).

Coconut is highly nutritious and rich in fibre and energy, with low glycemic index. It improves heart health, keeps us full, reduces sugar cravings and is a valuable source of lauric acid, a natural antimicrobial fatty acid, which helps fights bacterial, fungal and viral infections to boost the immune system.

Chocolate Chip Coconut Pecan Squares

Ingredients: IMG_0718

  • 1 1/2 cup unsweetened shredded coconut
  • 1/2 cup quick cooking oats (or another 1/2 cup coconut for gluten-free)
  • 1/4 cup chocolate chips of choice
  • 1/4 cup pecans, chopped
  • 2 tbsp honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Let’s go

  1. Preheat oven to 350F. Line a 8×8 inch baking pan with parchment paper.  IMG_0723
  2. Whisk eggs in a large mixing bowl, adding in the vanilla, honey and cinnamon. Stir in the remaining ingredients.
  3. Transfer batter into the baking pan and flatten with palm or spatula.
  4. Bake for 15-20 minutes until top turns golden brown. Keep an eye on it – coconut toasts easily! 
  5. Let cool, and cut into squares.
