Fresh Herb Salad with Cherry Tomatoes and Amaranth

Create a cooling summer salad using a fragrant blend of fresh herbs in place of regular salad greens. Toss in sweet cherry tomatoes, chewy amaranth grains and crunchy seeds with a squeeze of lime to touch up these kickin’ flavours! 

Amaranth is a super food in the form of tiny little seeds. They are are gluten-free, a complete source of protein, high in fibre, and an excellent source of magnesium, vitamin B6, iron and calcium.

Fresh Herb Salad with Cherry Tomatoes and Amaranth

  • 1/2 cup cilantro, chopped
  • 1/2 cup parsley, choppedIMG_0659
  • 6 green onions, chopped
  • 1 cup cherry tomatoes, halved
  • 1 15oz can of mixed beans
  • 1/2 cup amaranth
  •  2 limes, juiced
  • 3-4 tbsp olive oil
  • handful of sunflower seeds
  • S&P to taste

Let’s go: 

  1. Bring 1 1/2 cups of water and amaranth to a boil in a medium saucepan. Reduce heat, cover, and simmer 20 minutes. Let cool.
  2.  In a large bowl, toss the herbs, tomatoes, and beans together. Drizzle with olive oil, and squeeze in the fresh limes. Toss, and add more oil, salt, and pepper to taste.
  3. Fluff the amaranth with a fork (it will be sticky!) and mix in with the salad. Sprinkle with sunflower seeds, and serve immediately.
