Edamame Dip

Dive into this creamy Asian-inspired green dip as many times as you like. It is made with edamame beans and avocado, and blended with fresh cilantro. Every bite is rich in protein, healthy fats and fibre. Scoop up!  

Edamame Dip

  • Servings: 2 cups

  • 2 cups edamame beans, shelled and cooked
  • 1 small ripe avocado
  • 1/2 cup packed fresh cilantro (or basil)
  • 2 cloves garlic, peeled
  • 3-4 tbsp water
  • 1 tbsp miso paste (and/or salt to taste) IMG_0681
  • Juice of 1 lemon or lime
  • Garnish: drizzle of olive oil, and a sprinkle of cayenne pepper & freshly ground pepper.

Let’s go:

  1. In a food processor, blend all the ingredients together, adding more water as necessary to achieve desired consistency. Garnish with spices and olive oil.
  2. Serve with veggie sticks or chips.
