Summer Chickpea Salad

This perky summer salad is cheap and easy. Just the way we like it for picnics or a quick side to the grill. Seasonal tomatoes, cucumber, fresh herbs and garlic are tossed with canned chick peas and voila! A fresh, filling high-protein, low-calorie salad ready in minutes. 

Summer Chickpea Salad

  • Servings: 4

  • 2 cans (~30oz) chickpeas, rinsed and drained
  • 5 tomatoes, roughly chopped
  • 1 cucumber, sliced
  • 1 small (red) onion, sliced
  • 1 cup fresh herbs: basil, mint and/or cilantro, roughly chopped
  • 2 cloves garlic, minced


  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • juice of 1 lemon
  • 1/2 tsp cayenne pepper
  • S&P


  • Feta cheese, to taste

Let’s go:

  1. Toss everything together. Done.
