Celery and Pea Salad

A breezy summer salad with the right amount of crunch, tang and creamy sweetness.

Celery and Pea Salad

  • Servings: 4

  • 1/2 bunch of celery (6 stalks) IMG_0485
  • 1/4 cup apricots or other dried fruit
  • 1/2 cup green peas
  • 1/3 cup fresh parsley, chopped
  • Option: 1 handful of toasted nuts


  • 1 tbsp mayonnaiseIMG_0487
  • 1 tbsp yogurt
  • 1/4 tsp salt
  • 1/4 tsp brown sugar/ honey
  • 2 tsp lemon juice or white wine vinegar
  • Freshly ground black pepper

Let’s go:

  1. Mix the celery, peas, parsley, dried fruit and nuts in a large bowl.  Whisk the dressing together in another bowl and drizzle over salad. Toss and adjust salt & pepper to taste.
  2. Serve chilled. Store for up to 3 days covered and refrigerated.
