Watermelon Salad with Mint, Feta and Balsamic reduction

Cool down the weekend with this super refreshing watermelon salad. The combination of juicy watermelon, fresh mint, creamy feta and syrupy balsamic reduction is so lip-smackingly delicious you’ll be craving it all summer long.

Watermelon Salad with Mint, Feta and Balsamic reduction

Ingredients:

  • 15 cups (half a large) watermelon, chilled and cubed
  • 8 oz feta cheese, crumbled
  • 5 tbsp balsamic reduction, click here for how to DIY
  • 3 tbsp fresh mint, chopped
  • Salt and fresh ground pepper to taste

Let’s go

1. Combine all ingredients except the balsamic reduction in a large serving bowl

2. Drizzle balsamic reduction just before serving (5 tbsp if you are mixing before serving, or let guests drizzle to their heart’s delight)
